Shoyu Ramen

A clear soy broth, springy noodles, and a jammy egg doing its best.

🧺 Ingredients

  • 1 portion fresh ramen noodles
  • 2 cups good chicken stock
  • Tare: 2 tbsp soy sauce, 1 tsp mirin, 1/2 tsp sesame oil
  • 1 soft-boiled egg (6.5 minutes)
  • Scallions, nori, leftover roast pork if you have it

👩‍🍳 Steps

    Boil the egg for exactly 6.5 minutes, then shock in ice water.

    Mix the tare in the bottom of your serving bowl.

    Bring stock to a bare simmer — don't boil the soul out of it.

    Cook noodles 30 seconds less than the pack says; drain hard.

    Pour stock over tare, add noodles, arrange toppings like you're being judged.
