🧺 Ingredients
- 1 L good beef stock
- 1/2 onion + thumb of ginger, charred in a dry pan
- 2 star anise, 1 small cinnamon stick, 1 tbsp fish sauce
- 200 g flat rice noodles
- 150 g beef sirloin, sliced paper-thin (freeze 20 min first)
- Bean sprouts, basil, lime, sliced chili

Simmer stock with the charred onion, ginger and spices for 12 minutes.

Cook rice noodles per the pack, rinse, divide into bowls.

Fan the raw beef slices over the noodles.
