Tom Yum Goong

Hot-sour shrimp soup that slaps you awake in four flavor directions at once.

🧺 Ingredients

  • 12 shrimp, shells reserved
  • Lemongrass, galangal (or ginger), kaffir lime leaves, chilies
  • 3 tbsp fish sauce, 3 tbsp lime juice, mushrooms, 1 tbsp chili paste (nam prik pao)

👩‍🍳 Steps

    Boil the shrimp shells 5 minutes for a fast stock; strain.

    Bruise the aromatics and simmer them in the stock 5 minutes.

    Add mushrooms, chili paste and shrimp; 2 minutes, no more.

    Off the heat: fish sauce and lime. Never boil lime juice. Ever.
