🧺 Ingredients
- 200 g flat rice noodles
- 12 shrimp, peeled
- Sauce: 2 tbsp fish sauce, 2 tbsp tamarind paste (or lime + brown sugar), 2 tbsp sugar
- 2 eggs, 2 cups bean sprouts
- Crushed peanuts, lime wedges, chives

Soak noodles in hot tap water for 10 minutes until bendy but not soft.

Sear shrimp in a hot wok 1 minute per side; set aside.

Scramble eggs in the same pan, then add noodles and sauce; toss 2–3 minutes.

Return shrimp, add sprouts, toss 30 seconds — sprouts should stay crunchy.
