🧺 Ingredients

  • 400 g boneless chicken, cubed + potato starch
  • Glaze: 3 tbsp rice syrup (or honey), 2 tbsp soy, 1 tbsp gochujang, garlic
  • Peanuts or almond slices

    Starch the chicken and double-fry: 3 minutes, rest, then 1 minute hotter.

    Boil the glaze in a wide pan until it bubbles like lava.

    Toss chicken in the glaze off the heat, fast, 20 seconds.
