Chicken Karaage

Japanese fried chicken: soy-ginger marinade, impossibly crunchy.

🧺 Ingredients

  • 400 g chicken thigh, in big bite chunks
  • Marinade: 2 tbsp soy, 1 tbsp sake (or mirin), 1 tsp grated ginger, 1 clove garlic
  • 1/2 cup potato starch
  • Oil for frying, lemon wedge, kewpie mayo

👩‍🍳 Steps

    Marinate the chicken 10 minutes while the oil heats.

    Drain lightly, toss in potato starch until each piece looks frosted.

    Fry at 170°C for 3 minutes, rest 2 minutes on a rack.

    Fry AGAIN at 190°C for 1 minute — the double fry is the whole secret.

    Squeeze lemon, dot with mayo, burn your mouth, no regrets.
