  • 400 g chicken thigh, small bites, marinated in soy + five spice
  • Sweet potato starch (the secret) or potato starch
  • A handful of basil leaves, salt-pepper mix

    Marinate 10 minutes, then coat thickly in starch.

    Fry at 175°C for 3–4 minutes until deeply crunchy.

    Flash-fry the basil leaves for 5 seconds — they turn to glass.
