Charcoal chicken skewers, lacquered with tare. The smoke is complimentary.

🧺 Ingredients

  • 400 g chicken thigh + 2 scallion whites, in chunks
  • Tare: 4 tbsp soy, 3 tbsp mirin, 1 tbsp sugar, 1 tbsp sake
  • Skewers, soaked in water

👩‍🍳 Steps

    Simmer the tare until it coats a spoon, about 5 minutes.

    Thread chicken and scallion alternately onto skewers.

    Grill or pan-sear 4 minutes a side, brushing tare every flip.

    Final brush, final char, eat straight off the stick.
