🧺 Ingredients

  • 1 store-bought tonkatsu (or leftover fried cutlet)
  • 1/2 onion, thinly sliced
  • 2 eggs, barely beaten
  • Sauce: 1/2 cup dashi, 2 tbsp soy, 1 tbsp mirin, 1 tsp sugar
  • 1 big bowl hot rice, scallions

    Heat the cutlet until crisp (oven or air fryer), slice into strips.

    Simmer onion in the sauce in a small pan until translucent, 3 minutes.

    Lay the cutlet on the onions, pour egg around in a spiral.

    Lid on, 60–90 seconds — the egg should tremble, not bounce.

    Slide the whole thing over rice. Scallions. Silence. Gratitude.
