Thai Green Curry

Coconut, basil, and a green paste with serious intentions.

🧺 Ingredients

  • 3 tbsp green curry paste
  • 1 can (400 ml) coconut milk
  • 300 g chicken thigh, sliced
  • 1 small eggplant + a handful of green beans
  • 1 tbsp fish sauce, 1 tsp sugar, thai basil

👩‍🍳 Steps

    Fry the paste in the thick top of the coconut milk for 2 minutes until it splits and smells loud.

    Add chicken, coat well, cook 3 minutes.

    Pour the rest of the coconut milk, add vegetables, simmer 8 minutes.

    Season with fish sauce and sugar; taste until it fights back.

    Tear in basil off the heat. Serve with jasmine rice.
