🍛Thai Green Curry
Coconut, basil, and a green paste with serious intentions.

🧺 Ingredients
- 3 tbsp green curry paste
- 1 can (400 ml) coconut milk
- 300 g chicken thigh, sliced
- 1 small eggplant + a handful of green beans
- 1 tbsp fish sauce, 1 tsp sugar, thai basil

Fry the paste in the thick top of the coconut milk for 2 minutes until it splits and smells loud.

Add chicken, coat well, cook 3 minutes.

Pour the rest of the coconut milk, add vegetables, simmer 8 minutes.

Season with fish sauce and sugar; taste until it fights back.

Tear in basil off the heat. Serve with jasmine rice.
