Butter Chicken

Charred chicken in a silky tomato-butter-cream dream.

🧺 Ingredients

  • 400 g chicken thigh, in chunks
  • Quick marinade: 3 tbsp yogurt, 1 tsp garam masala, 1 tsp paprika, garlic + ginger
  • 1 can (400 g) tomato purée
  • 3 tbsp butter + 1/2 cup cream
  • 1 tsp sugar, salt, cilantro

👩‍🍳 Steps

    Toss chicken in the marinade while the pan heats — even 5 minutes helps.

    Sear chicken hard until charred at the edges; remove.

    In the same pan, melt butter, add tomato purée, simmer 5 minutes.

    Return chicken, add cream and sugar, simmer 5 more minutes.
