Mango Sticky Rice

Warm coconut rice, cold sweet mango. Thermodynamic perfection.

🧺 Ingredients

  • 1 cup glutinous rice (soaked 10 min in hot water)
  • 1 cup coconut milk
  • 3 tbsp sugar + 1/4 tsp salt
  • 1 ripe mango, sliced
  • Toasted sesame or mung beans for crunch

👩‍🍳 Steps

    Microwave the soaked rice with 3/4 cup water, covered, 3 + 3 minutes with a stir between.

    Warm coconut milk with sugar and salt; don't boil.

    Pour 2/3 of the coconut sauce over the hot rice; rest 10 minutes to absorb.

    Plate rice with cold mango slices, drizzle the remaining sauce.

    Sesame on top. Eat warm-cold in the same spoonful.
