🧺 Ingredients

  • 2 boneless chicken thighs
  • 1/2 cup buttermilk (or milk + 1 tsp vinegar) + hot sauce
  • 3/4 cup flour + 2 tbsp cornstarch + paprika, garlic powder, salt
  • Shredded cabbage + 2 tbsp mayo + splash of vinegar (slaw)
  • 2 brioche buns, pickles

👩‍🍳 Steps

    Soak thighs in the spiked buttermilk 10 minutes.

    Dredge in the flour mix, pressing hard so craggy bits form.

    Shallow-fry 4–5 minutes per side until deep golden and 74°C inside.

    Toss the slaw. Toast the buns in the chicken pan. Waste nothing.

    Stack: mayo, pickles, chicken, slaw. Press down. Listen to the crunch.
