🧺 Ingredients
- 2 boneless chicken thighs
- 1/2 cup buttermilk (or milk + 1 tsp vinegar) + hot sauce
- 3/4 cup flour + 2 tbsp cornstarch + paprika, garlic powder, salt
- Shredded cabbage + 2 tbsp mayo + splash of vinegar (slaw)
- 2 brioche buns, pickles

Soak thighs in the spiked buttermilk 10 minutes.

Dredge in the flour mix, pressing hard so craggy bits form.

Shallow-fry 4–5 minutes per side until deep golden and 74°C inside.
