Carbonara

Eggs, cheese, cured pork. No cream. Do not ask about cream.

🧺 Ingredients

  • 200 g spaghetti
  • 100 g guanciale or thick bacon, in batons
  • 2 egg yolks + 1 whole egg
  • 50 g pecorino (or parmesan), finely grated
  • A violent amount of black pepper

👩‍🍳 Steps

    Render the guanciale in a cold pan brought to medium until crisp; keep the fat.

    Whisk eggs, cheese and pepper into a thick paste.

    Cook pasta very al dente; save a cup of the starchy water.

    Off the heat, toss pasta with the fat, then the egg paste, loosening with pasta water.

    It should ripple like silk. If it scrambles, we never speak of this.
