🧺 Ingredients
- 200 g spaghetti
- 100 g guanciale or thick bacon, in batons
- 2 egg yolks + 1 whole egg
- 50 g pecorino (or parmesan), finely grated
- A violent amount of black pepper

Render the guanciale in a cold pan brought to medium until crisp; keep the fat.

Whisk eggs, cheese and pepper into a thick paste.

Cook pasta very al dente; save a cup of the starchy water.

Off the heat, toss pasta with the fat, then the egg paste, loosening with pasta water.
