🧺 Ingredients

  • 1 big bowl day-old rice (fresh rice is a crime here)
  • 3 eggs, 3 scallions, 2 tbsp oil
  • 1 tbsp soy sauce around the wok's edge, white pepper

👩‍🍳 Steps

    Mix half the beaten egg INTO the cold rice first — golden coating trick.

    Scramble the rest of the egg in screaming-hot oil, add the rice.

    Toss hard 3 minutes; soy around the edge so it sizzles into smoke.

    Scallions, white pepper, out. Every grain should hop.
