Tacos al Pastor

Chili-marinated pork, charred pineapple, warm tortillas.

🧺 Ingredients

  • 300 g thin pork shoulder slices
  • Marinade: 2 tbsp achiote or mild chili paste, 2 tbsp pineapple juice, 1 tsp cumin, garlic
  • 1/2 cup pineapple chunks
  • 8 small corn tortillas
  • White onion, cilantro, lime

👩‍🍳 Steps

    Massage the pork with the marinade; rest 10 minutes while the pan heats.

    Sear pork on high, 2 minutes a side, until edges char; rest, then chop.

    Char the pineapple chunks in the same pan.

    Warm tortillas directly on the flame or a dry pan, 10 seconds a side.

    Build: pork, pineapple, onion, cilantro, lime. Two hands minimum.
