  • 2 cups warm short-grain rice, lightly salted
  • Fillings: tuna-mayo, umeboshi, or grilled salmon flakes
  • Nori strips, a bowl of salted water for your hands

    Wet and salt your hands — rice sticks to doubt, not to salt water.

    Cup rice, press a well, hide a spoon of filling, cover with rice.

    Press into a triangle with three firm rotations. Firm, not angry.
